Vickie’s Collard Greens and Smoked Turkey Butt

As you approach the home of any descendant of Willie and Betty Cooper, you will hear the raucous laughter of a family that knows how to truly live, laugh and love. Willie and Betty raised five biological children and three foster children in their modest home in Albion. They are a family that believes in a generous spirit, generous laughter, and generous helpings! Their recipes have transformed over time, but everyone is always welcome at the table.

Ingredients:
1-2 smoked turkey butts (depends on how large they are)
3 bunches collard greens
1 small sweet onion, chopped fine
2 cloves of garlic, chopped (can also use garlic powder)
1 tsp. crushed red pepper
1 tablespoon sugar (I use stevia)
Sea salt and freshly ground black pepper, to taste

Wash and clean turkey butt(s).  In large pot, cover turkey butt with water and boil for 1 hour or til tender.

Pick and wash greens.  Make sure you remove most of the stem.  Chop leaves coarsely.  Add all ingredients to pot w/turkey butt.  Cook on medium heat for 1.5 hours adding water if needed.
