Traveler’s Chicken Noodle Soup

We went on the most… mediocre vacation of a lifetime. No really, the house was mediocre, the weather was terrible, and the highlight was half the Oakley family came down with the flu. But that’s the current count, maybe we’ll all be blessed. What does a girl do when the wind chill is -25 and your flu cursed husband still has to plow? You fill him full of the Traveler’s Chicken Noodle Soup. Heartier than most, a touch of tomato, and a healthy pinch (or two) of red pepper flakes…for the sinuses! Enjoy!



3-32 oz containers of Wegmans Chicken Culinary Stock
1 plain rotisserie chicken deboned and chopped into bite-size pieces
7 ribs of celery, diced
3 medium onions, diced
5 carrots, peeled and diced
4 cloves of garlic
A couple swishes of Wegmans Fresh Italian Herbs (from the tube) – I cheat!
1 package of egg noodles
2 healthy pinches of red pepper flakes
salt and pepper to taste
A few swishes of Olive Oil


Saute onion and celery for five minutes. Add garlic and saute for an additional 1 minute. Add the chicken stock and carrots. Raise the heat and bring to a boil for 20 minutes. Add herbs and chicken and wait for the simmer. Add the noodles and simmer for 7 minutes. Add tomatoes, red pepper and a generous portion of salt and pepper. Feed to your poor family. They can’t breathe out of their nose, or really taste anything, but if you are well enough to make this cheater chicken soup…Enjoy!
