So when you pick up your CSA and there is variegated acorn squash and green onion, the wheels in your easily distracted mind start turning. Have a chat with the charmingly creative, Ben Duncan, and things all come together. Add granola. It’s that simple. Granola, Craisins, green onion, brown sugar, Amish butter made with sea salt. I used Michele’s Granola Pumpkin Spice brand of granola…seasonal, delicious, I just can’t say enough. Enjoy!
1 acorn squash, sliced in half and deseeded
Enough pumpkin spice granola to fill the cavity
4 TBSP of Amish butter made with Sea Salt
2 TBSP of light brown sugar
5 green onions, diced ‘til halfway through the green
a handful of Craisins
Preheat your oven to 375’. Halve and deseed your squash. Bake with cavity facing down on cookie sheet for 1/2 hour. Remove from oven and turn squash so cavity is facing up. Fill the cavity of your squash with granola and a few Craisins. In a small fry pan, melt 4 TBSP of salted butter, add green onion and sauté for two minutes. Add 2 TBSPs of brown sugar. Remove from heat and stir in warm butter until you have a delicious warm sugary mixture. Pour over granola in squash. Bake for an additional half hour. Enjoy!
