Heather’s Amazing Apple Coffee Cake

Mike Heberle has been working at the Heberle farm on Lakeshore Road in Kendall since he was a young boy. He blesses his mother’s home with fruits, vegetables, and right now, a front yard full of pumpkins for the large, growing family he is a part of. His mom, in turn, blesses her son with sweet treats like this Apple Coffee Cake. I’ve sampled this cake and I’d say they have a fair exchange going on! 5 stars!

Cake Ingredients:

1 stick plus 2 tsp unsalted Amish butter
1-1/2 Cups packed light brown sugar
2 large free-range eggs (Buy your eggs at Olde Dogge Inn and save-a-sato!)
2 Cups oat flour (available at Millers)
1 tsp baking soda
1 tsp ground cinnamon
½ tsp salt
1 cup sour cream
1 tsp pure vanilla extract
2 Cups peeled, cored and chopped Honey Crisp apples

Crumble Topping Ingredients

½ cup packed light brown sugar
½ Cups oat flour
½ tsp ground cinnamon
4 Tbsp unsalted Amish butter, softened

Brown Sugar Glaze

½ cup packed light brown sugar
½ tsp vanilla extract
2 Tbsp water
2 Tbsp real Maple Syrup from your favorite OC sugar shack

Directions

Preheat oven to 350’. Lightly grease a 13×9 baking dish with 2 tsp butter

In a large bowl, blend together the remaining stick of butter and sugar until light and airy. Add the eggs one at a time, beating after the addition of each. In a separate bowl, sift together the flour, baking soda, cinnamon and salt. Add mixture to wet ingredients, alternating the sour cream and vanilla. Fold in the apples. Pour into the prepared baking dish..

Topping: In a bowl combine the sugar, oat flour, cinnamon and butter, mix until it is crumbly. Sprinkle the topping over the cake and bake until golden brown (about 45 minutes.) Check with a toothpick to see if it is set. Remove from the oven and let cool on the deck, away from hungry children and pets!

Glaze: In a bowl, combine sugar, vanilla, syrup and water and mix until smooth. Drizzle the cake with the glaze and let harden slightly. Serve warm.
