Living on the far east side of the county, and working in Brockport, how could my foodie soul deny a trip to Wegmans for some autumn soup ingredients. This deliciously creamy chicken, vegetable and cheese sacchettini soup is meant to warm your soul.
Ingredients:
2 Tbsp. Olive Oil
I large clove of garlic, minced
I medium onion, diced
I plain rotisserie chicken, skin removed and shredded
2 – 32 oz. cartons of Wegmans Chicken Culinary Stock
1- 6 oz. can of tomato paste
2 Tbsp. fresh parsley
1 tsp fresh basil
½ tsp red pepper flakes
1 lb. bag of Wegmans Rainbow Blend of frozen green beans, yellow carrots, carrots, and red pepper
1 package of Wegmans Italian Classics fresh cheese sacchettini
¾ Cup of light cream
Sauté onion and garlic in olive oil over medium heat for three minutes, until the onion is translucent and the garlic fragrance fills the air. Add 2 – 32 oz. cartons of Wegmans Chicken Culinary Stock, tomato paste, 2 Tbsp. of fresh parsley, 1 tsp of fresh basil, 1 bay leaf and ½ teaspoon red pepper flakes. Bring to a low boil and simmer for five minutes. Salt and pepper to taste. Add Wegmans Rainbow Blend of frozen vegetables and shredded chicken. Bring to low boil and simmer for eight minutes. Remove bay leaf. Add cheese sacchettini and continue to boil for three minutes. Remove from heat and let cool for two minutes. Add light
cream and stir. Serve warm with crusty bread.
